Are you ever curious about what other people eat? Maybe I’m just nosy, but I’m always interested in what goes on in other people’s kitchens.
To align with my new year’s goals—to be the best version of myself and to continue my health journey—I’ve been doing pretty well on eating healthy. Not perfect, of course. But it has felt nice to put some effort in and limit the foods that make my stomach feel like it was punched by someone with studded rings (cough, cough, dairy). I try to go for moderation in everything—if I’m having healthy main meals, like salads and smoothies and other fresh-ingredient creations, I really truly don’t think a donut or brownie or handful of gummy bears here and now hurts. I just don’t.
Here’s a round-up of what we ate in the past week, which is healthy-leaning.
Monday

- Coffee with Silk dairy-free creamer (many, many cups)
- Banana
- Kroger salad kit, Greek Salad
- Easy pasta. Made with gluten-free veggie-based pasta, tomato, garlic, onion, spinach, green peppers
- Ben & Jerry’s non-dairy ice cream
Note: Monday is Bachelor night. We try to keep things pretty simple and easy, so that we can dive into the show and relax. And we always split a bottle of wine.
Tuesday

- Coffee with dairy-free creamer
- Banana
- Pesto quinoa bowl with tomato, cucumbers, avocado, and a chunk of French bread
- Non-dairy “Cheeze Lover’s” frozen pizza, by Daiya
Wednesday

- Coffee with dairy-free creamer
- Smoothie, made with spinach, almond milk, blackberries, raspberries, dried goji berries, chia seeds, flax seed, and frozen pineapple chunks
- Apple slices with peanut butter
- Salsa Chicken, made in a crock-pot mixed with fresh salsa, served with cauliflower rice
Thursday

- Coffee with dairy-free creamer
- Oatmeal with chia and flax seeds
- Walnut brownies
- Tamales
- Jelly-filled donut (okay, two)
Friday

- Coffee with dairy-free creamer
- Raspberries and blackberries
- Avocado toast
- Salsa chicken left-overs, mixed with spinach and cauliflower rice
Saturday

- Coffee with dairy-free creamer
- Take-out from Taco Party in Grand Junction. I got some pork belly tacos and fries with garlic lemon aioli 🙂
- Wraps, made from spinach tortillas, vegan mayo, turkey slices, fake cheese slices (Daiya brand), spinach, cucumbers, and tomato
Sunday

- Cinnamon rolls
- Purple Carrot* meal: Japanese Yam Sushi Bowls
- Wine
*Purple Carrot is a plant-based meal subscription service that offers special diet boxes! It’s uber-healthy, and has several options for a week’s worth of meals at a time. I think Tom Brady has something to do with this company? Shout out to my parents for gifting us with a box. 🙂
